Io me ne sono innamorata :-D!
Buon appetito!

You guys all know how much I love street food!
I am not talking about the fancy one that is so fashionable at the moment, meant to sell in the commercial resort areas at stellar prices.
My passion regard the real one, the genuine one, that often and willingly finds in the ovens of many cities and villages. Today we will discover a typical Focaccia, born in the South of Italy, precisely in the beautiful Region of Apulia!
I wanted to prepare the amazing Focaccia Barese for more than two years, since I firstly saw a picture from the Apulia’s street.
First of all, I want to tell you that the focaccia comes out very well even without mother yeast. After all I prepare pizzas in the pan with excellent dry yeast beer so I simply mixed my technique that I use for the dough and for baking pizza pan.
Second fundamental point: abound with olive oil, must be tasty, it will be the fundamental ingredient of the focaccia.
Thirdly, use the re-milled semolina to make the focaccia more tasty and homemade. Having said that, let’s start, you will see that it is not so difficult to churn out a good home-made focaccia from Bari.
Boil a big boiled potato, clean it and mash it with the potato squash. I used the planetary because in the last week I have my right hand stuck, but you can also knead it by hand.
Pour into the planetary (or large container) the flour, the semolina, the dry yeast (or the brewer’s yeast dissolved in the water) and the potato.
Stir and add the cold water a little at a time, continue to mix initially slowly and then vigorously.
Pour the oil from 50/60 g (the rest of the oil will be used to work the two balls of dough, for the spreading of the oil on the trays and on the surface of the focaccia), always stirring and finally the salt. The dough should be mixed for 15 minutes until you get a smooth and sticky dough.
Brush a large tray or two containers of olive oil and place the dough that you have separated forming two balls well brushed with oil. I advise you to spread oil on your hands and on the work surface to create them ;-). Then stored inside the oven with or without film, I have not used it. The dough is so well oiled that it will not create any crust on the surface. Let stand for 6/8 hours, with the tropical heat of this month of August leavening is much more accelerated.
After the time, take the circular pan that you use for cooking, brush it of olive oil. Turn on the ventilated oven at maximum power of 250 degrees, let it heat for at least 30 minutes. Lay the dough on the pan, use the point of your fingers, oil and of roll it out gently
Cut the tomatoes, squeeze some of them over the dough, the liquid and the seeds will color and make the focaccia more tasty.
Place the tomatoes by placing the smooth round side up and press gently, they must slightly sink into the dough. Do not be afraid, abound with tomatoes.
Finally add the olives and lastly the oregano and the salt. Pour in the dough a tablespoon of oil mixed with a little bit of water and salt, make the focaccia moist while cooking. Let the focaccia rest for 30 minutes, while it is heating the oven
.
Bake by placing the pan on the bottom of the oven, just as you do for pizza in a pan in the Roman style. You will hear the focaccia sizzle, it will form the crisp base that characterizes it.
Cook for 10 to 15 minutes, you have to check, each oven has its own characteristics. After that, marry it to the second shelf starting from the bottom and brown the focaccia well, the tomatoes will have to be lightly burnt. Your focaccia is ready, let it lightly peel off the oven and serve it warm,
you will feel that enjoyment of this amazing typical taste of South!
Enjoy your meal!
